Oh my, another gorgeous summer salad to squeeze into the menu rotation before fall arrives. This Blackberry Walnut Salad with Honey Vinaigrette is delicious. I can’t wait for you to try it!

Blackberry Walnut Salad with Honey Vinaigrette:
Let’s chat about this salad. The base is made up of tender lettuce (fresh baby greens or butter leaf are my top two picks), then on top of that we place sweet summer blackberries, cucumber, honey crisp apples, diced mango, chopped walnuts, green onions and creamy feta! What a fantastic combo.

The Honey Vinaigrette:
This dressing can be whisked together in two minutes. I use Cobram Estates California Extra Virgin Olive Oil, apple cider vinegar and an orange blossom honey. Easy, quick, delicious and healthy!

Put it All Together and Wow!
Gorgeous color, loaded with antioxidants, fiber, and healthy fats, this salad just can’t get any better!

The Recipe: Blackberry Walnut Salad with Honey Vinaigrette
You will need: a good quality Extra Virgin Olive Oil, apple cider vinegar, honey, and an excellent sea salt.

- 1/2 cup good quality extra virgin olive oil
- 1/4 cup apple cider vinaigrette
- 1/4 cup honey
- freshly ground pepper and sea salt or kosher salt, to taste
- 5 ounces baby greens or butter leaf lettuce (or a combo of the two)
- 1 pint blackberries
- 1/2 of one honey crisp apple, diced
- 1 cup ripe mango, diced
- 1/2 cup cucumber, diced (I prefer Persian cucumbers)
- 1/2 cup chopped walnuts
- 1/4 cup sliced green onions
- 4 ounces soft goat cheese or crumbled feta

place all ingredients in a jar or bowl and shake or whisk until emulsified. Set aside.

Prep all ingredients. On a platter or in a bowl place lettuce, top with berries, apple, mango, cucumber, onions, and walnuts. Shake dressing and dress salad to your liking, toss. Sprinkle with sea salt and freshly ground pepper, toss again. Sprinkle with goat cheese, toss very gently, add more goat cheese on top and serve.
You will likely have extra dressing. It can be used for up to one month.
