This Fresh and Easy Basil Vinaigrette is so fresh, so fragrant, so delicious, and so darn easy, you’re going to want to use it all the time.

Fresh and Easy Basil Vinaigrette:
This Easy Basil Vinaigrette has only three ingredients: basil pesto, olive oil, and white balsamic vinegar. If you use store bought pesto, you can whisk it together in less than a minute, literally a minute. If you make your own pesto, then it will take about 7 minutes.
What You Need:
A great olive oil– I love Cobram Estates California Extra Virgin Olive Oil, it’s COOC approved, so no fake olive oil here! This olive oil is loaded with healthy Omega 9 fats, is anti-inflammatory, and is good for your heart, brain, and skin!
Quality white balsamic vinegar– my favorite hands down is Prelibato White Balsamic Vinegar. This vinegar is so smooth and delicious you can drink it. I kid you not. No acidic aftertaste, just a soft, delicate flavor that makes every salad taste better. If you prefer to buy vinegar at a grocery store, you can usually find O Organics on the shelf, not as smooth as Prelibato, but still good.

Making your own pesto is easy, and honestly homemade is the best, THAT SAID, I have used fresh store bought pesto several times and the vinaigrette always comes out great. You can usually find fresh store bought pesto in the refrigerated pasta aisle.

Salads with Easy Basil Vinaigrette:
You’ll be shocked to find that I have several salads you can use this Easy Basil Vinaigrette on. For example, my Tomato Burrata Salad…fresh cherry tomatoes, creamy burrata and pine nuts, yum!

My Easy Caprese Salad…a simple to toss together salad that’s great served alongside any protein.

Salmon Salad with Butternut Squash… greens, sweet roasted butternut squash, seared salmon and goat cheese. Divine!

The Recipe: Fresh and Easy Basil Vinaigrette
What you need: Extra Virgin Olive Oil, White Balsamic Vinegar. I love Maldon’s Flaked Sea Salt (I actually buy the huge tub to save money)

A delicious, fragrant salad dressing made in minutes!
- 3 Tablespoons good quality extra virgin olive oil
- 3 Tablespoons basil pesto, homemade or store bought (see my recipe link above in blog post)
- 1 1/2 Tablespoons good quality white balsamic (or champagne vinegar)
Whisk all ingredients together. Pour over salads, tomatoes, salmon or use as a dip for sourdough.
Store in the fridge for up to three days
