Chicken Pesto Grilled Cheese Sandwich:
Grilled sourdough layered with aromatic pesto, white cheddar cheese, savory chicken and fresh vine ripened tomatoes, yum! This sandwich is hearty, delicious and easy to make.
The Chicken-You Have Several Choices!
You can use rotisserie chicken, sliced sandwich meat from the deli, or go all out and make my tender cook top chicken breasts! I have made this sandwich with all three options and each is delicious. Really, it comes up to how much time you want to put into it and personal preference.

The Pesto- You Have Two Choices!
I use homemade pesto for this recipe. It’s easy, takes five minutes, and you can use the leftovers on pasta or my lovely pesto salmon. That said, I am all about options, so if you prefer to use fresh pesto from the grocery store, do it! You can usually find fresh pesto next to the fresh pasta in the refrigerated section at your market.

What You Need:
A grill pan or panini press work best for this recipe. These pans give the bread those beautiful crispy grill marks. However, if you don’t care about grill marks, a flat pan works too.

The Recipe: Chicken Pesto Grilled Cheese Sandwich

A flavorful, hearty sandwich made in about ten minutes
- 2 slices sourdough bread
- 4 tablespoons pesto (store bought or homemade. My recipe linked above)
- 2 slices sharp white cheddar cheese
- sliced rotisserie chicken breast or sliced chicken sandwich meat
- 4 tomato slices
- 1 tablespoon extra virgin olive oil
- 1 tablespoon butter
If you are making your own pesto, do that first.
Place a grill pan or panini pan on low/medium heat for three minutes. While pan heats, cut bread slices in half. Generously slather all four pieces of bread with pesto.
On two pieces of bread layer one slice of cheese, then chicken breast slices, two tomato slices and another slice of cheese. Finally, place the last two slices of bread with pesto on top. Now you have a sandwich. Time to cook!
To your pan: add olive oil and butter. Once melted, swirl the pan around to make sure the pan is well coated. Add the sandwiches to pan. Cook the first side until golden grill marks form on bread and cheese begins to melt. You can use the panini press or a spatula to press bread into pan. When done to your liking, turn sandwich over and cook until golden. If cheese isn't melted cover with a pan lid for a couple of minutes..Turn off heat. Serve.
If you are a mayo lover, I highly recommend spreading mayo and pesto to each slice of bread. It's a GREAT combo. Enjoy!
