Sweet Potato-Black Bean Chili Cheese Fries!:
These sweet potatoes are drizzled with olive oil, sprinkled with sea salt and pepper and roasted in the oven, then topped with a chili and cheddar cheese. Yum!

The Chili- Homemade or Store Bought?
I usually make these Sweet Potato-Black Bean Chili Cheese Fries with leftovers after making my own homemade Turkey Chili. Of course if you want to use store bought chili, that’s fine too. If you’d like to keep this meal vegetarian you use this chili <—.

The Recipe: Sweet Potato-Black Bean Chili Cheese Fries!
Tips and what you need: a cooking sheet, parchment paper and as always, you need a good knife.

Homemade chili cheese fries never tasted so good! Use my homemade chili recipe linked above or use store bought. Either way you'll love it!
- 3 sweet potatoes, about 1ยพ pounds, peeled and cut into 1/2" wedges
- 2-3 tablespoons olive oil, divided
- Sea salt and freshly ground black pepper
- 2 cups chili (homemade linked above, or use storebought)
- 1 cup grated cheddar cheese, grated
- 3 scallions, sliced (for garnish

Heat the oven to 400ยบF and place oven rack in center position

Scrub or peel the sweet potatoes. Trim the ends and cut the potatoes in half lengthwise, then cut each half lengthwise into ยฝ-inch-wide wedges.

On a sheet pan covered with parchment paper, toss the sweet potato wedges with 2 tablespoons olive oil and season generously with salt and pepper. Spread in an even layer and roast for 20 minutes, turn oven up to 425 and turn potatoes over, roast for 20 more minutes until crispy and lightly browned (total cooking time is 40-45 minutes). When the sweet potatoes are almost done roasting, heat the chili, grate cheese and slice green onions.

Take fries out of the oven and place on platter. Spoon chili over fries, sprinkle with cheese, and garnish with scallions. Serve.
