Yes, I admit it, I have been on a wrap kick lately. They are just so darn easy, and this girl loves a lunch that is easy, quick to assemble, healthy and delicious. And if it doesn’t require cooking, even better! The Waldorf Chicken Salad Wrap is all these things and more.

The Waldorf Chicken Salad Wrap:
This wrap has all the traditional ingredients of a Waldorf salad: crispy greens, chopped nuts, sweet apples, grapes, and tangy dried cranberries (or dates), I add protein in the form of diced chicken, and this classic combination is still….well, classic!

The Chicken:
Friends this is supposed to be an easy lunch, so feel free to use rotisserie chicken from the grocery store. BUT if you like to batch cook or food prep, you can always meal prep my juicy cooktop chicken breasts in advance and use them in wraps all week!

The Dressing- I am Giving you Two Choices!
A traditional Waldorf salad uses a creamy mayonnaise based dressing, but I also love to drizzle this beauty with heart healthy olive oil, antioxidant rich lemon juice, and a little honey. It’s light, delicious and so darn healthy! So it’s up to you, ranch or lemon vinaigrette. if you do decide to use a ranch dressing I hope you will try my Easy Ranch Recipe!
The Wrap:
You will need a 9-10″ tortilla or wrap for this recipe. You can use whatever kind you like, even grain or gluten free tortillas, just make sure the tortillas are fresh and soft, otherwise they break when folded.

The Recipe: The Waldorf Chicken Salad Wrap
What you need: a good knife and a great sea salt!

A healthy five minute lunch or dinner that requires no cooking!!
- 1/2 tablespoon good quality extra virgin olive oil
- 1/2 tablespoon lemon juice
- 1 teaspoon honey
- 1 9" flour tortilla or wrap of your choice
- 1 cup lettuce, chopped romaine or little gem are my favorites
- 1/2-2/3 cup rotisserie chicken, diced
- 1/4 cup diced granny Smith apple
- 1-2 tablespoons chopped walnuts or pecans
- 3-4 dates, chopped --or 1-2 tablespoons dried cranberries (or both!)
- 5-6 red grapes, quartered
- sea salt and pepper, to taste

If using the lemon vinaigrette: In a small bowl whisk together olive oil, lemon juice and honey, set aside

Lay a tortilla flat, spread chopped lettuce down the center of tortilla leaving a couple of inches bare on each end

Sprinkle with diced chicken, apple, walnuts or pecans, dates (or cranberries) and grapes. Drizzle with dressing (either ranch or lemon vinaigrette), sprinkle with sea salt and pepper. Fold ends of tortilla toward the center, then roll in sides (like a burrito). Enjoy!
If you are using ranch dressing, you may wish to place all salad ingredients in a bowl, dress, toss and then place in the tortilla for more even distribution of the dressing.
