We recently traveled to France, first we visited the island of Corsica, then visited beautiful Paris. While there we ate at a cute little cafe right next to our Air BNB. While having breakfast one morning I noticed that the children’s menu had the cutest Pancake Fruit Skewers. I thought they were so fun I just had to put them on the blog.

Pancake Fruit Skewers:
These little skewers are really easy to make. You simply cut up fruit, make small pancakes, fold them and slide the fruit and pancakes onto the skewers. That’s it! They are so cute and really fun for the kids.

Pancakes from Scratch or a Mix?
For this recipe you are going to make silver dollar sized pancakes. I have a homemade pancake recipe you can use if you like to make things from scratch. But if you prefer to use a mix, have at it! I will however recommend my favorites. I really like Kodiak Protein Waffle and Pancake Mix, and their Traditional Whole Grain Pancake Mix, for my gluten free friends I recommend the Kodiak Cakes GF Mix.

What Fruits Can you Use for Pancake Fruit Skewers?
Basically any fruit you likethat is in season! For this version I used Strawberries, bananas, and raspberries, but feel free to use whatever is in season. Peaches, mango, even apples or pears. Whatever floats your boat. Dust with powdered sugar and serve with real maple syrup and you have a fabulous breakfast!
I Prefer Cooking Pancakes on an Electric Crepe Maker:
Why? They never stick and come out perfectly golden, even the first batch! I like this crepe maker.

The Recipe: Pancake Fruit Skewers
What you need: a homemade pancake recipe or a good quality mix. I really like Kodiak Protein Waffle and Pancake Mix, and their Traditional Whole Grain Pancake Mix, for my gluten free friends I recommend the Kodiak Cakes GF Mix. I When making pancake I get the best results using this crepe maker.

Silver dollar sized pancakes with fruit on skewers make a fun breakfast for the kids!
- 8 organic strawberries, washed and greens cut off
- 1 banana, sliced
- 8 raspberries
- 1 1/2 cups prepared pancake batter (see my recipe and mix suggestions above) This gives you more than enough for four pancakes per skewer plus extra for mistakes:)
- maple Syrup

Prepare fruit and set aside. Prepare pancake batter (your favorite mix or my recipe linked above.

Heat a skillet on medium heat for two minutes or use electric griddle. If using a skillet add butter to skillet, pour 1- 1 1/2 tablespoons of batter onto skillet, this will make a silver dollar sized pancake. When bubble appear on the surface and start to pop, flip the pancakes. Remove for heat when second side is golden.

Fold pancakes and slide onto skewers with pieces of fruit in between. Use a screen colander to dust with powdered sugar if desired. Serve with a side of warm maple syrup. Enjoy!
You can use any seasonal fruit for this recipe. I love this recipe made with peaches in the summer or sliced apples and cinnamon in the fall.
