The Super Easy ‘How To’ (and some pictures to make you hungry)
All that you have to do to prep this chicken is brush the skin with olive oil and season with salt and pepper. Then place in a cast iron skillet and roast for an hour. Finish by brushing with a glaze of honey, lemon, olive oil and butter the last 15 minutes! That’s it!
When using so few ingredients it is important to make sure those ingredients are great quality. Be sure to use fresh squeezed lemon juice, grass fed butter, your favorite raw honey and organic, extra virgin olive oil. I use an organic Extra virgin olive oil from La Tourangelle. You can buy direct from La Tourangelle or on Amazon.
The glaze gives this chicken a crispy, golden, flavorful skin.
And your entire house will smell heavenly!
Be sure to save all the bones to make homemade broth for soups!

-
While chicken is cooking place all ingredients for glaze into a small sauce pan.
-
Bring to a simmer for 2 minutes, stirring. Allow to thicken slightly. Remove from heat.

When chicken has been in the oven for an hour begin brushing chicken with glaze every few minutes for 15-20 minutes until skin is a golden crispy brown. Dip brush into chicken juices when brushing too! Yum!

This looks amazing and I love how easy it is to make! Chicken dishes are by far my favorite! The lemon honey glaze sounds amazing and fresh for this time of year.
The addition of the lemon honey glazy sounds amazing! And so fresh for Spring and Summer. I seriously want to give this a try this weekend – even if just on regular chicken. Love this! XO

Such a brilliant idea to cook it in a cast iron pan! I love cooking whole chickens, especially when the recipe is this easy. I do have a question. Do you buy your La Tourangelle online, or is it carried in grocery stores?
I buy it both ways. My Whole Food’s Market carries the avocado oil and infused oils but not the olive oil, so I order that straight from la Tourangelle or Amazon:)
You had me at no chopped vegetables! Just ordered a few chickens from our local farmer, I’ll definitely be trying this.
Right? Sometimes you just want easy, and as long as it’s still delicious and healthy I am all for easy!

Thanks Lezley!
Has anyone ever made this recipe?
Yes. Many people. Did you have a question about it?
Delish! Stuffed bird with some lemon, garlic and green onions and then added the glaze as suggested with just a touch of lime, since I had one on the counter begging to be used. I can’t recall enjoying a chicken recipe like this for the longest, thanks so much. Even my picky eating son could not find anything to criticize : )
I am so glad. Thanks!
Could I do this in a crock pot? How long would I cook it for? Would it need a base of some kind like chicken broth so it wouldn’t burn on the bottom? Thanks.
This recipe is specifically for roasting. You could google to find a similar one made in a crock pot though 🙂
