Ok folks, this is my go to salad dressing. It’s so simple I never felt like it deserved it’s own post. That said, at least fifty precent of the salads I serve at home are made with some version of this Easy White Balsamic Vinaigrette, so it stands to reason, it needs it’s own space on the internet.

Why I love this Easy White Balsamic Vinaigrette:
This dressing tastes great on crispy salads, tender leaf salads, spinach salads, green salads with fruit, and on top of tall that, it’s good for you! It’s truly versatile but most importantly, it’s delicious. I promise you’re going to love it, I literally use it all the time.

Ingredients Matter. They Really do.
My motto is ‘when there are only a few ingredients in a recipe, those ingredients need to be top notch!’ You may not notice a sub par olive oil in something with 20 ingredients, but in a salad dressing with only two ingredients, you want the best of the best. For this simple salad dressing you only need two ingredients….
A great olive oil– I love Cobram Estates California Extra Virgin Olive Oil, it’s COOC approved, so no fake olive oil here! This olive oil is loaded with healthy Omega 9 fats, is anti-inflammatory, and is good for your heart, brain, and skin!
Quality vinegar– my favorite hands down is Prelibato White Balsamic Vinegar. This vinegar is so smooth and delicious you can drink it. I kid you not. No acidic aftertaste, just a soft, delicate flavor that makes every salad taste better. If you prefer to buy vinegar at a grocery store, you can usually find O Organics on the shelf, not as smooth as Prelibato, but still good.

As I mentioned before, I use some form this dressing on at least half of the salads I have published on my blog. So here goes…

The Recipe: Easy White Balsamic Vinaigrette
What you need: A good quality Extra Virgin Olive Oil and White Balsamic Vinegar.

Whisk together in two minutes. Great for all kinds of salads.
- 1/2 cup extra virgin olive oil
- 1/4 Cup good quality white balsamic vinegar
- sea salt and freshly ground pepper, to taste

Whisk ingredients in a small jar. Stays good for two weeks.
If desired you can add flavor enhancers like honey, chives, or mustard, to shake things up!
