Yes….another peach salad, and I am not sorry. I can’t get enough of the sweet summer peaches this summer and I am putting them in everything. So, let’s talk about this gorgeous Easy Peach and Mozzarella Salad!

The Easy Peach and Mozzarella Salad:

So, what’s in it? Tender baby greens, fresh ripe peaches, roasted salted pistachios, and soft mozzarella packed in water. That’s it…well sort of, I do offer the option to add micro-greens. I mean why not add more nutrition to an already nutritious salad? I drizzle this lovely salad in a light white balsamic vinaigrette. Perfection!

The White Balsamic Vinaigrette:

If you have a favorite white balsamic vinegar, have at it. If not, here is my two cents. When making any recipe with so few ingredients it is important to make sure those ingredients are very high quality. I can’t rave enough about the Prelibato White Balsamic Vinegar we use here at The Organic Kitchen…it’s smooth and creamy unlike most of the acidic white balsamic vinegars found at the grocery store, which are usually a blend of white grapes and distilled vinegar. Prelibato White Balsamic vinegar is made from white or golden grapes which are aged in wooden vats for 12 years to develop a silky smooth flavor.

The Recipe: Easy Peach and Mozzarella Salad

What you need: sea salt , a good knife (my favorite) and a good quality White Balsamic Vinegar.

A simple summer salad that makes a big impact!

Servings: 6 servings
Ingredients
Salad:
  • 5 ounces of the best baby greens you can find
  • 2-3 fresh peaches, peeled and sliced
  • 1/2 cup fresh mozzarella packed in water (I used the small "perline" but you can also use the big ball and dice)
  • 1/2 cup roasted salted pistachios
  • optional: micro-greens
Salad Dressing:
  • 1/3 cup olive oil
  • 3 tablespoons good quality white balsamic
  • generous pinch sea salt or kosher salt (to taste)
  • a few turns of freshly ground black pepper (to taste)
Instructions
For salad:
  1. Place greens on a platter, add peaches, cheese and nuts (microgreens too, if using)

For Vinaigrette:
  1. Whisk olive oil, vinegar, sea salt and pepper together. Dress salad to your preference, toss. Sprinkle with sea salt and pepper if needed, toss again.
