This Valentine’s Day, try a dessert that’s a little different, a little unexpected, and completely cute and delicious! I am referring to these Valentine’s Day Apple Pie Pops!

What better way to start a Valentine’s Day post than with a romantic wedding. My son was married December 21st, 2013. We just received the photographs from Christine Olson Photography....and so of course I must share!

…followed by a fun filled celebration…
…in the perfect venue right in our own backyard (so to speak) near the lighthouse where my son proposed. I don’t think I have ever seen more beautiful table settings and flowers.

…and the cake and dessert bar were stunning!

Every single dessert on this table from Cake Goodness was simply exquisite. The cake was three tiers, red velvet, cinnamon crunch, and chocolate. There were ‘cake shots’, mini cupcakes, cookies, chocolate dipped rice crispy treats and these apple pie pops as well…it was quite the spread.
The Valentine’s Day Apple Pie Pops:
Melinda the owner and operator of Cake Goodness was kind enough to share her “Apple Pie Pops” recipe with us. But we added a little Valentine heart to ours.
The Recipe: Apple Pie Pops

Sweet little apple pies on a stick!
- 5 cups peeled chopped apples
- 1 Tablespoon lemon juice
- 1/2 cup brown sugar
- 1/2 cup sugar
- 1/4 cup cornstarch
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 2 cups water
- 2 boxes Trader Joe's frozen pie crust thawed (each box has two crusts)
- Cinnamon, for dusting
- granulated sugar, for dusting
- 1 large egg, for egg wash
- 1 Tablespoon water
- Natural food coloring optional for decoration

Toss the apples with lemon juice and set aside. Combine the sugars, cornstarch, cinnamon, nutmeg, and salt in a saucepan. Stir in water. Bring mixture to a boil. Boil 2 minutes stirring constantly.

Add the apples and bring to a boil again. Reduce the heat to medium low and simmer for 10-12 minutes. Cool completely. It will set up as it cools. Makes 4 cups of apple pie filling.

Thaw pie crust, place on a floured surface and roll a few times with a rolling pin. Cut with cookie cutter (any shape you wish, I used these) and set a lolly pop stick in center of cut dough. Place filling on dough, top with another piece of cut dough and pinch edges to seal. You can leave the pop plain or add a heart (or star, or whatever you wish) by taking extra dough and kneading it with one drop natural food coloring (like this).

Whisk egg and water together, lightly brush surface of both sides of each pop and dust with sugar and cinnamon.

Allow to cool and serve!
Makes approximately 20-24 pops depending on the size of the cookie cutters you use. We used 2 1/2 inch cookie cutters, going bigger might make the pie too heavy for the stick. You will need lollypop sticks -where to buy (affiliate link)
Preheat oven to 325, place rack in center of oven. I use a Trader Joe's Pie Crust for this recipe. It is all natural and uses butter, not hydrogenated oils. If you don't have a natural pre- made pie crust available I recommend making your own.
