So Much Flavor on One Little Baguette Toast!

Simply toast baguette slices, top with mashed avocado, a sprinkling of soft crumbled goat cheese, sea salt , chives and red pepper flakes for a little kick, and Voila! A healthy little snack everyone can chow down on. Avocados are loaded with healthy fats, the kind of fats that give you energy, nourish your cells and make your skin glow. They taste pretty great too.

The Recipe: Avocado and Goat Cheese Toastettes

You will need sea salt (I use Maldon Flaked Chef’s Salt), freshly ground black pepper (I love this grinder!) and red pepper flakes (affliaite links)

Ingredients
  • 1 artisan sourdough baguette
  • 2 large ripe avocados, mashed with fork
  • 2-3 oz soft goat cheese
  • 2 tsp olive oil
  • sea salt I use Maldon Flaked Chef's Salt
  • freshly ground black pepper I love this grinder!
  • red pepper flakes
  • 2 T chives sliced
Instructions
  1. Preheat oven to 425 and place rack in upper third of oven. Cover a cookie sheet with unbleached parchment paper.
  2. Slice baguette into 1/2" slices. Place slices on cookie sheet and place in oven till golden brown, usually 3-4 minutes.
  3. While bread is in oven, mash avocados with a fork.
  4. Remove bread from oven, spoon mashed avocado on each slice of bread and then sprinkle with with soft goat cheese.
  5. Place back in oven for 2-3 minutes (until goat cheese is just melted).
  6. Remove, sprinkle liberally with sea salt, pepper and chives.
  7. Then sprinkle lightly with red pepper flakes. Serve!
