That Color!

You will be so distracted by the soft pink color of this smoothie bowl that you’ll almost forget it’s packed with protein, antioxidants, omega 3’s and fiber. If you’d like to add even more brain boosting healthy fats, adding a quality MCT oil is a great idea.

The Flavor!

That soft color is matched by a very soft flavor. Slightly sweet, with a little cherry tang and of course some texture provided by that shredded coconut, black chia and crunchy granola. If berry smoothies are more your jam, click!

What you need:  a good quality blender. I love my Blentec! And if you’d like, add quality MCT oil to this recipe (tasteless, odorless and incredibly good for you) Can’t find black chia seeds? <—Click!

A delicious, healthy, light breakfast!

Ingredients
  • 2 cups your favorite milk (almond, coconut, cashew or whole cow's milk, all work great!)
  • 2 cups frozen peaches
  • 1 cup frozen cherries
Toppings:
  • Shredded coconut
  • 2/3 granola of your choice (I use gluten free)
  • 1 tablespoon black chia seeds
  • 3-4 fresh ripe cherries, cut in half and pits removed
Instructions
  1. Place your choice of milk, fruit, and dates in blender and blend until smooth

  2. Pour into bowls and sprinkle with toppings. Enjoy!

So Much Flavor on One Little Baguette Toast!

Simply toast baguette slices, top with mashed avocado, a sprinkling of soft crumbled goat cheese, sea salt , chives and red pepper flakes for a little kick, and Voila! A healthy little snack everyone can chow down on. Avocados are loaded with healthy fats, the kind of fats that give you energy, nourish your cells and make your skin glow. They taste pretty great too.

The Recipe: Avocado and Goat Cheese Toastettes

You will need sea salt (I use Maldon Flaked Chef’s Salt), freshly ground black pepper (I love this grinder!) and red pepper flakes (affliaite links)

An easy and delicious way to get your healthy fats!

Ingredients
  • 1 artisan sourdough baguette
  • 2 large ripe avocados, mashed with fork
  • 2-3 oz soft goat cheese
  • 2 tsp olive oil
  • sea salt I use Maldon Flaked Chef's Salt
  • freshly ground black pepper I love this grinder!
  • red pepper flakes
  • 2 T chives sliced
Instructions
  1. Preheat oven to 425 and place rack in upper third of oven. Cover a cookie sheet with unbleached parchment paper.
  2. Slice baguette into 1/2" slices. Place slices on cookie sheet and place in oven till golden brown, usually 3-4 minutes.
  3. While bread is in oven, mash avocados with a fork.
  4. Remove bread from oven, spoon mashed avocado on each slice of bread and then sprinkle with with soft goat cheese.
  5. Place back in oven for 2-3 minutes (until goat cheese is just melted).
  6. Remove, sprinkle liberally with sea salt, pepper and chives.
  7. Then sprinkle lightly with red pepper flakes. Serve!

Only Five Ingredients!

This beautiful salad has only five ingredients. Watermelon, mint, feta, sea salt and vinegar. This salad which is usually dressed with a white rice vinegar. I find that dressing a little strong and acidic so I opt for this smoother, creamier vinegar: Prelibato White Balsamic vinegar from Italy. You may get lucky and find it in a store, but I almost always have to buy online. Second choice, O California White Balsamic. (<—Amazon link) I find this one in many stores and it’s a little easier on the wallet.

Finish with a pinch of my favorite Chef’s salt (affiliate link) and voila! A cold, refreshing fruit salad that’s the perfect combo of sweet and salty with a hint of mint!

A refreshing, light summer salad.

Ingredients
  • 4 cups watermelon cubed or use a melon baller
  • ½ cup mint chopped
  • ½ cup Feta cheese the creamier the better!
  • Sea salt
  • White Balsamic lightly drizzled over melon approx. ½ cup
Instructions
  1. Use a melon baller or cut watermelon into cubes. Sprinkle with desired amount of crumbled feta, and chopped mint. Drizzle lightly with white balsamic, sprinkle lightly with sea salt, toss and serve.
