Strawberries with Lemon Mascarpone and Pistachios!
Desserts do not get much more simple than this one. Fresh juicy strawberries with lemon mascarpone, dipped in pistachios! And I offer two options for sweetening the deal, honey or stevia drops (<—affiliate link) for my carb watching friends! When I am in the mood for a touch of vanilla I use vanilla cream stevia drops.
Somebody pinch me….no cooking, only five ingredients and delicious!
So much better and healthier than…dare I say it? Marshmallow fluff gaaahhhh!
The Recipe: Strawberries with Lemon Mascarpone Dip and Pistachios
Tips and what you will need: you will need a microplane to grate the lemon. Always grate just until the white is exposed and then move to a new area. Find my wooden serving board here.
Carb watchers you can use stevia drops or vanilla cream stevia drops.
An easy appetizer or dessert for
- 2 pints organic strawberries, washed
- 8 oz mascarpone cheese (like cream cheese but silkier and sweeter)
- 2 tablespoons honey, or liquid stevia drops to taste
- zest of one large lemon
- 1/2 cup roasted salted pistachios, chopped

In a bowl use a fork to combine mascarpone, honey (or stevia drops) and lemon zest (reserve a little zest for garnish)

Serve with strawberries and pistachios. Yum!
