Grilled cheese is comfort food that really hits the spot. There are so many reasons to serve grilled cheese as an easy lunch or casual dinner, not the least of which is that everyone loves a good grilled cheese sandwich.
Getting the Best out of Your Sandwich:
Grilled cheese doesn’t really require any special equipment, a quality cast iron pan or a good grill pan is all you need for cooking, personally, I like those grill marks, so I opt for the grill pan. But your sandwich will be delicious no matter what pan you use. So my main recommendation to get the best grilled cheese possible is to use really good bread and really good cheese. Ingredients matter, especially when there are so few!

The Brie & Fig Jam Grilled Cheese Sandwich: This savory and sweet sandwich is heaven on a plate I tell you. If you have never tried the combination, get to it.
The Chicken Pesto Grilled Cheese: I love this classic combination of basil pesto, white cheddar, and tender chicken.
Pesto and Pepper Jack and Pear Brie and Cranberry Grilled Cheese: You get a twofer here… Both of these sandwiches are pretty spectacular. The Pesto and Pepper Jack is an amazing combination of savory, spicy and herby, while the Pear with Brie and Cranberries is sweet and savory. Make your choice, or even better, make both!
The Bacon, Apple and Caramelized Onion Grilled Cheese!

Grilled Cheese Sandwiches are my all time favorite thing! I love creating “grown up” versions like these. They all look wonderful but the fig and brie is speaking to me!
