I am a California girl, so I happen to be very partial to this California Avocado Salad with Orange Vinaigrette! It’s fresh, light, healthy and beautiful.

What’s in the California Avocado Salad with Orange Vinaigrette:
Two ingredients that California is known for: avocados and oranges, plus fresh spring greens, sliced almonds, diced dried apricots, mild crumbled goat cheese (or feta if preferred) and mint all drizzled in a delicious orange vinaigrette!

The Orange Vinaigrette:
I love homemade salad dressings. They only take minutes to make and are far superior in flavor and nutrition than store bought. For this vinaigrette we simply whisk together good quality extra virgin olive oil, fresh squeezed orange juice, honey, a little white balsamic (or champagne vinegar) and chives. That’s it!

What to Serve it With:
I love this salad served alongside almost any protein, especially this steak….

The Recipe: California Avocado Salad with Orange Vinaigrette
What you need: a good knife, a good sea salt, and a hand held juicer.

A light and healthy salad that's perfect for summer!
- 1/3 cup good quality extra virgin olive oil
- 3 tablespoons fresh squeezed orange juice (I recommend using juice oranges)
- 1 tablespoon white balsamic or Champagne vinegar
- 2 teaspoons honey
- sea salt and freshly ground black pepper to taste
- 5 ounces fresh baby greens or butter leaf lettuce
- 1/4 cup sliced almonds
- 1/2 cup mild crumbled goat cheese (or feta, if preferred)
- 2 large ripe avocados, sliced
- 6-8 dried apricots, sliced
- 15 mint leaves, chopped

Place all dressing ingredients except salt and pepper in a small bowl or jar and whisk until well emulsified. Taste, and add sea salt and pepper to taste. Set aside

Place greens on platter or in a bowl, sprinkle with all other ingredients. Whisk salad dressing again and drizzle desired amount over salad. Toss. Sprinkle with sea salt, pepper and mint. Toss and serve
