I developed this recipe for www.PotsandPans.com to celebrate National Cooking Day. The National Cooking Day celebration was established to honor and commemorate the joys of home cooking. You know I am a big fan of home cooking as just one way to nourish ourselves and our family. When you make food yourself, you know exactly what goes in it. In this case it’s very simple: Grass fed Beef, Sea Salt, Pepper, Butter and Chives!
How to Make Perfect Cooktop Filet Mignon:
In my humble opinion the best way to get a steak exactly how you want it is by searing it on the cooktop in a grill pan and then finishing in the oven. You can find several choices of fantastic grill pans here.
Notice how searing in a grill pan creates a perfectly crispy exterior while the oven finish crates a perfectly done, tender interior…
Finish Your Perfect Cooktop Filet Mignon in The Oven:
After searing on the cooktop place the grill pan in the oven to finish to your liking…rare, medium rare, medium…you call the shots. It’s all about the timing, and once you get it down, you’ll have a perfect steak every time.
The Recipe: Perfect Cooktop Filet Mignon!
What you need: a great grill pan, you can find several choices of fantastic grill pans here.
A perfect steak, seared on the cooktop and oven finished to your liking.
- 2 6-8 ounces filet mignon, cut 2” thick
- sea salt and freshly ground black pepper, to taste
- 2 tablespoons ghee or olive oil (I prefer ghee because it doesn’t smoke)
- 1 tablespoon butter (or ghee)
- 1 tablespoon chives, chopped

Remove steaks from refrigerator and allow to rest on counter for a half hour. Preheat oven to 425 degrees and move oven rack in center position.

Place oven safe grill pan on cooktop. Turn heat to high and allow pan to heat for two-three minutes. The key to making a steak with a crispy seared outside is a hot pan. While pan heats, sprinkle both sides of filet mignon with salt and pepper. Turn heat down to medium/high, add ghee or olive oil to hot pan. Carefully add steaks to grill pan. You should hear a loud pshhhh sound. Cook steak until a brown crust is established (about five minutes). Use tongs turn steaks. Sear second side and then place pan in oven.

For rare: cook 5 minutes. For medium rare: cook 6-7 minutes. For medium 8-9 minutes (Timing is for 2” thick steaks, if your steaks are thinner, allow for less time)

Gorgeous!!! We don’t own a grill and have some amazing steak restaurants nearby so I’ve *never* cooked my own steak. But this method sounds pretty failproof – I should probably surprise my husband with it one night! 🙂
