Let’s Discuss the Cherry Goat Cheese Salad with Cherry Vinaigrette:
I start with a base of tender baby greens, then add pitted cherries cut half, soft crumbled goat cheese, heart healthy avocado and chopped pecans. Then we drizzle all that in a homemade cherry vinaigrette! Colorful, flavorful and healthy!

The truth is, you can pit these cherries by hand in five minutes. You simply score the cherry around the pit, twist each side in opposite directions, and then pull that pitt out. That said, if you want a faster, easier and less messy way to do it, buy this cherry pitter!
The Cherry Vinaigrette:
This cherry vinaigrette is whisked together in less than two minutes. Made with extra virgin olive oil, white balsamic vinegar (or Champagne vinegar) and cherry jam, this dressing adds flavor and color to this already stunning salad.

The Recipe: Cherry Goat Cheese Salad with Cherry Vinaigrette
What you need: you can pitt cherries by hand (see instructions above) or use a cherry pitter. You will need an excellent olive oil. I recommend my favorite white balsamic vinegar, but you can also use Champagne vinegar. And as always I recommend my favorite finishing salt!

A delicious summer salad made in 15 minutes
- 1/4 cup extra virgin olive oil
- 2 tablespoons white balsamic or champagne vinegar
- 2 tablespoons cherry jam
- sea salt and pepper to taste
- 5 ounces baby greens (butter leaf works great too)
- 1 cup cherries, pitted and cut in half (read how above in blog post)
- 4 ounces soft mild goat cheese, crumbled
- 2 ripe avocados, sliced
- 1/2 cup chopped pecans

Place all ingredients in a jar and whisk well.

Tear lettuce into bite size pieces and place on platter or in a bowl. Prep cherries.

Whisk salad dressing again, dress greens and toss. Top with cherries, goat cheese, avocado and nuts. Season with salt and pepper. Serve.
