The Organic Kitchen’s Blueberry, Walnut and Feta Salad is a very simple side dish that takes only a few minutes to toss together! It’s perfect served alongside any protein or add some rotisserie chicken for an easy complete meal.

How to Make the Blueberry, Walnut and Feta Salad:
This salad only has a few ingredients: fresh baby greens (I buy mine at my local farmers market), raw walnuts, sweet blueberries and crumbled feta cheese. I am going to offer some advice here…when making any dish with so few ingredients be sure those ingredients are the freshest and best. When a recipe has 14 ingredients you may not notice if the sea salt or olive oil isn’t top quality, but when a recipe only has four ingredients, each ingredient matters.

The Honey Vinaigrette:
This dressing is a snap to make and adds just the right touch of sweetness and zing to this lovely little salad. Made with high quality olive oil, freshly squeezed lemon juice, honey and little white balsamic vinegar, it’s subtle but perfect! (I use this White Balsamic Vinegar, but you can find good ones at the grocery store too)

What to Serve it With:
Serve alongside a simple BBQ chicken for a light, healthy meal.

Simple, Beautiful, Delicious and it Comes Together in Six Minutes!
It literally takes two minutes to place the salad ingredients on a platter and another four to combine the vinaigrette. I hope you enjoy this salad as much as my family does.

The Recipe: Blueberry, Walnut and Feta Salad
What you need: a good quality White Balsamic Vinegar and sea salt.

A simple, elegant side salad that comes together in minutes.
- 5 oz baby greens
- 1 cup blueberries
- 1/2 cup raw walnuts, chopped
- 1/3-1/2 cup crumbled full fat feta
- 1/3 cup olive oil
- 1 tablespoon honey
- 2 tablespoons lemon juice
- 1 tablespoon white balsamic or champagne vinegar
- generous pinch sea salt or kosher salt
- several turns of freshly ground black pepper

Place lettuce on platter, top with blueberries, walnuts and feta. Dress to your liking and toss. Sprinkle with more sea salt and pepper if desired

Whisk all ingredients together in a small jar or bowl. Extra dressing can be kept for up to a week in the fridge.

Your salad was delicious. I altered it alittle, I glazed the walnuts in a pan with butter and dark brown sugar and I added some peeled, cubed little snacking cucumbers.
