This gorgeous French Toast with Caramelized Peaches breakfast is a summer delight! Fresh, ripe, sweet peaches caramelized in real maple syrup and set atop vanilla French Toast. It doesn’t get better than that!.

French Toast with Caramelized Peaches
This seasonal breakfast is one of the most tasty ways to take advantage of a summer fruit whose season NEVER seems long enough! This fresh fruit topping is the visual star of the show, no doubt, but when it come to French toast, without a great bread, the rest just doesn’t matter! And if you think I am going to recommend a bread, you are right, and wrong. And this is why, some people like their French toast fluffy others like it hearty and dense. So choose a bread with a flavor and texture you love, then you can’t go wrong. I personally love a good sourdough. Whatever bread you choose, make sure to use a good quality day old bread. Day old bread just works better for French toast. Why? I don’t know, t’s science.
Make It Gluten Free and Just as Good!
If you live gluten free, you do not have to live without French Toast. This isn’t 1990. There are really good gluten free breads these days. My favorite is New Grains gluten free bread. They ship for free on orders over $48. I buy a big batch, freeze it, and use it when needed.
How To Caramelize Peaches:
This sounds a little intimidating, but it’s not. Caramelizing peaches is as simple as peeling, slicing, and cooking them in butter, vanilla paste (or extract) and maple syrup. Super easy.
Want to Top it with Something Creamy or Crunchy?
If you want a little extra somethin’ somethin’ on your French toast with peaches try mascarpone cheese, whipped cream, or granola! Let’s talk about each. Mascarpone is similar to American cream cheese but it’s a little silkier and creamier. It makes the perfect creamy balance to the sweet peaches and maple syrup. You could also go with my “sour whipped cream”, which is amazingly delicious and thanks to sour cream, has a nice little tang. If it’s a crunch you’re after, granola is always a nice option. Choose your favorite granola and go to town!
The Recipe: French Toast with Caramelized Peaches
You will need: a griddle or pan (cast iron works best) vanilla extract or vanilla paste (I get the quart because I use it all the time and it saves money! And real maple syrup. (affiliate links)
French toast topped with caramelized peaches
- 4 fresh ripe peaches, pealed and sliced
- 1 1/2 Tablespoons lemon juice
- 3 Tablespoons real maple syrup or brown sugar
- 3 tablespoons butter
- 1 teaspoon vanilla extract or paste
- 1/8 teaspoon cinnamon
- 1 pinch of sea salt
- 8 slices of your favorite bread (I use a hearty whole grain artisan bread)
- 3 large eggs
- 1/4 cup vanilla almond milk
- 2 Tablespoons butter

Peel and slice peaches

In a bowl, toss together peaches, maple syrup (or brown sugar), cinnamon and sea salt. Place a skillet on medium heat, add butter. When melted, add peaches. Stirring occasionally, simmer for 5-6 minutes or until caramelized. Add vanilla, stir and remove from heat. While peaches cook, make French toast.

Slice bread 1" thick

place eggs and almond milk in a small bowl and whisk

place a large pan on medium heat, add butter and allow to melt

When butter and pan are hot, dip each piece of bread into almond milk/egg mixture and place in pan.

Cook until first side is golden brown, flip bread and cook other side until golden

Remove from pan and top with caramelized peaches. If desired top with mascarpone cheese or sour whipped cream (see suggestions in clog post)
