What are Overnight Oats?
Overnight oats are pretty much just what the name says. You simply soak oats in almond milk, maple, vanilla, and spices overnight in the fridge. In the morning you top with nuts and dates and then grab and go!
The Recipe: Maple Vanilla Overnight Oats
Tips and what you will need: You will need almond milk for this recipe. If you would like to make your own, find my recipe here. You will also need cardamom, a delicious spice found in the grocery spice aisle, or have it delivered to your door.

- 6 dates pits removed, thinly sliced
- 1 cup old-fashioned rolled oats
- 1 cup almond milk
- 1/4 teaspoon cardamom
- 1 Tablespoon real maple syrup
- 1/2 teaspoon vanilla paste or extract but I prefer paste!
- 1/4 cup pecans chopped
- pinch sea salt

Slice dates

Place all ingredients except pecans in a small bowl or mason jar.

Stir to combine. Cover and refrigerate overnight.

Remove from fridge the next morning. Stir oats. Add pecans and serve!

Overnight oats are the best! The only thing to rival them are overnight chia puddings. Anything healthy and quick that I can grab in the morning for breakfast is a winner!
