Cinco de Mayo is right around the corner. It’s quite the big event in California. All the Mexican Restaurants have celebrations, people have parties in their homes, and of course everyone eats Mexican food. If you’re like me and celebrate at home, I thought you’d appreciate A Collection of Recipes for Cinco De Mayo!

Let’s Get the Party Started with Chicken!
A great way to start any Cinco de Mayo celebration is with a tender, juicy roasted chicken. I recommend making this Roasted Garlic Chicken and then shredding the meat for use in tacos, salads, soups etc!

But if El Pollo Loco style chicken is more your jam, then try this Spicy Lime Chicken made in the oven! Seasoned with herbs and spices, drizzled with lime and topped with my Tomato and Avocado Salad!

Tacos, Tostadas and Quesadillas:
Literally everyone loves tacos. They are a great choice for Cinco de Mayo. These Easy Fish Tacos with Mango Salsa are simply delicious!

But if Pulled Pork Tacos are more your style, try these made in the crock pot, Instant Pot, or oven!

My easy Garlic Lime Tacos are a fun Cinco de Mayo option. You can use rotisserie chicken in this recipe, or either chicken recipe shown above.

This Egg, Bean and Chorizo Tostada with Salsa Verde is perfect for any meal. This savory, runny yolk goodness served up on a tortilla with beans and avocado is the perfect example of a delicious, healthy meal that takes minutes to make but looks like you went to some effort, because you did, about 10 minutes of effort. Perfection.

No Cinco de Mayo Party is complete without some melted cheese! Caramelized Veggies Quesadillas with Salsas and Guacamole are to die for!

Sides and Salads:
These Roasted Mexican Potatoes with Cilantro Gremolata are fabulous to serve alongside any Mexican main course!

The Chopped Mexican Salad with Creamy Avocado Dressing is loaded with veggies and beans and dressed with a beautiful creamy avocado dressing!

I LOVE this Tomato Avocado Salad with Cilantro Lime Dressing. It’s colorful, delicious and healthy!

If you are looking for a lighter salad, then give this Greens with Mangos and Citrus Vinaigrette a try. So simple, sweet and so pretty.

Mexican Street Corn is always a great side dish choice! Grilled, slathered with butter, sprinkled with sea salt, cotija cheese and cilantro and then drizzled with lime…yum!

Salsas and Guacamole!
We all know a Mexican meal isn’t complete without an assortment of salsa and guacamole. First up Easy Pico de Gallo!

Bright, sunny and so darn good! Mango Salsa is easy to make and great on tacos, chips, os chicken.

Chunky Guacamole on everything please!
