It’s no secret I love salads. Most (but not all) of my salad recipes contain some sort of greens. But I have to say, I do love a unique side salad made without lettuce… for example, this Tomato Avocado Salad (Whole30). It’s really simple, tastes great with any protein, and is especially good when served with Mexican food.

The Tomato and Avocado Salad (Whole30):
This simple salad has only a few ingredients: cherry tomatoes, avocados, pine nuts, and a cilantro lime vinaigrette! So fresh, so light, so flavorful and Paleo/Whole30 compliant. Need to learn how to peel and dice an avocado? <—Click!
The Cilantro Lime Vinaigrette:
To make this dressing, whisk together good quality extra virgin olive oil, freshly squeezed lime juice, sea salt, pepper, and chopped cilantro. Voila! A tasty, healthy, dressing that adds just the right finishing touch to this already amazing salad. If you are one of those people that have a brain that tells you cilantro tastes like soap, first, I am sorry, second, feel free to skip it! The salad will still be delicious, I promise.
What to Serve it With:
Serve alongside my Spicy Lime Chicken (pictured), my Grilled Tri-Tip or with my Fresh Fish Tacos!
The Recipe: Tomato and Avocado Salad (Whole30)
What you need: a good knife and a hand held juicer for juicing the limes.
An easy salad to toss together. Great with Mexican food or a side dish to any protein.
- 1 pound grape or cherry tomatoes, halved
- 2 ripe but firm avocados, peeled and diced
- 1/3 cup roasted pine nuts
- sea salt and pepper to taste
- 1/8 cup good quality extra virgin olive oil
- 2 tablespoons freshly squeezed lime juice
- 1-2 tablespoons cilantro, chopped (depending on how much you want, or if you want to use more for garnish)
- sea salt and pepper to taste

Prep tomatoes and avocado and place in bowl or platter. Add pine nuts (toast if in a small pan medium heat if they aren't already toasted) Sprinkle salad with sea salt and pepper, set aside.

Whisk together olive oil, lime juice, cilantro, sea salt and pepper. Dress salad, toss gently, serve!
