Salads are my jam! I love simple salads, elaborate salads, and anything in between! This is one of my favorites: Greens with Asian Pears and Fig Balsamic. It’s delightful!

The Salad:
This salad is made up of mixed greens, sweet asian pears, caramelized nuts and soft goat cheese. These flavors and textures work so well together. Asian Pears are like a cross between an apple and a pear, they are sweet and grainy. If you can’t find them sub for your favorite pear.
The Dressing: Use a Fig Balsamic or Traditional
I use a beautiful fig infused balsamic vinegar whisked with heart healthy extra virgin olive oil and a little maple syrup. It literally takes two minutes to make this dressing! Why would anyone ever buy bottled? If you can’t find fig balsamic near you, just use regular aged balsamic.
The Caramelized nuts:
You can use store bought caramelized nuts or make your own. Either work just swell. To learn to make caramelize nuts watch this video or read this blog post.
Putting it All Together!
This gorgeous salad is a favorite. It has it all, sweet and savory, crunchy and creamy, color and flavor!
The Recipe: Greens with Pears and Fig Balsamic
What you need: fig infused balsamic vinegar or just use regular aged balsamic.

- 4 cups baby spring mix
- 1 ripe Asian pear, sliced
- 1/2 cup Crumbled goat cheese
- 1/2 cup Caramelized Nuts
- ⅓ cup extra virgin olive oil
- 3 Tablespoons fig balsamic vinegar (or traditional balsamic vinegar)
- 1 Tablespoon real maple syrup (skip syrup if using traditional balsamic)
- 1 pinch sea salt
- Black pepper to taste

Place, lettuce, sliced pears, cheese and pecans on a platter, dress to your liking and toss

Combine dressing ingredients in container with lid and shake. Dress salad right before serving. Yum!
