Happy Friday from Italy where the weather has been amazing and the food even better! I am wrapping up the week with a 5 minute lunch idea. The Organic Kitchen is collaborating with fashion and style blog The Working Girl Inc. on 5-15 minutes meals for people on the go. Believe it or not you can assemble this amazing Spinach Strawberry Salad Wrap in only a few minutes!
Start with your favorite tortilla or wrap. I use a spinach wrap from Whole Food’s Market.
Then add a layer of baby spinach…
… shredded rotisserie chicken and sliced green onions. Vegetarians sub out the chicken for avocados!
Then add some sliced strawberries.
Drizzle generously with balsamic glaze and sprinkle with goat cheese! I definitely recommend a balsamic glaze instead of vinegar. The glaze is thick, the consistency of syrup. It will ‘stay put’ better than balsamic vinegar so it won’t make your tortilla soggy.
Fold the top and bottom in first…
…then roll up the sides, wrap in parchment paper...
..and when you are ready to eat, slice in half and eat this super healthy 5 minute lunch!
