Happy Friday from Italy, where the weather has been amazing and the food even better! I am ‘wrapping’ up the week with a healthy 5 minute lunch idea. Believe it or not you can assemble this amazing Spinach Strawberry Salad Wrap in only a few minutes!

It’s a Wrap! Spinach Strawberry Salad Wrap:
This lunch is perfect for busy moms, those that need to pack something for work, and even for the kid’s lunch boxes!
Start with your favorite tortilla or wrap. I use a spinach wrap from Whole Food’s Market.
Then add a layer of baby spinach…
… shredded rotisserie chicken and sliced green onions. Vegetarians sub out the chicken for avocados!
Then add some sliced strawberries.
The Final Touches:
Drizzle generously with balsamic glaze ! I definitely recommend a balsamic glaze instead of vinegar. The glaze is thick, the consistency of syrup. It will ‘stay put’ better than balsamic vinegar so it won’t make your tortilla soggy. And last, sprinkle with crumbled feta or goat cheese.
How To Fold:
Fold the top and bottom in first…
…then roll up the sides, wrap in parchment paper...
..and when you are ready to eat, slice in half and eat this super healthy 5 minute lunch! Beautiful, healthy, delicious and easy. It really doesn’t get any better than that!

The Recipe: It’s a Wrap! Spinach Strawberry Salad Wrap
A healthy five minute lunch idea!
- 1 wrap or tortilla (I used a spinach tortilla)
- 1 cup loosely packed baby spinach
- 1/2-1 cup rotisserie chicken, shredded (or sub with avocado to keep this lunch vegetarian)
- 6 strawberries, sliced
- 1/3 cup crumbled feta or goat cheese
- 1-2 tablespoons balsamic glaze

Place tortilla on flat surface, add a layer of baby spinach. Top with chicken and sliced strawberries. Drizzle generously with balsamic glaze and sprinkle with cheese. Wrap according to pictured instructions above. Enjoy!
