How to Make The Veggie Wrap~ Five Minute Lunch

If you are a busy health conscious person ‘wraps’ just may be the perfect lunch for you. This colorful wrap is loaded with antioxidant rich vegetables and healthy fats, and is a cinch to make!

Simply top your favorite tortilla or wrap with a layer of spinach, then add diced tomatoes and diced Persian cucumbers (smaller than the cucumbers you are used to and seedless). Then layer in avocado slices and sprouts (I used bean sprouts) and drizzle with ranch dressing.

Fold the top and bottom, then fold the sides. Wrap in parchment paper and then cut in half when lunchtime rolls around. That’s it!

Now, Let’s Talk Ranch Dressing:

Who doesn’t love ranch dressing on a salad or for dipping? Unfortunately most store bought brands are loaded with crap artificial colors, flavors, fillers, preservatives etc…we can’t put that into our bodies! I have a homemade version that is delicious and can be made quickly. The creamy texture comes from soaked cashews blended with water. If you eat dairy, you can use straight up buttermilk. Either way, this ranch is totally ‘dip worthy’! That said, if you prefer to use a store bought ranch there are healthy options: I love Tessemae’s or Primal Kitchen’s Ranch Dressing and Primal Kitchen’s Ranch Dressing’s, both are Paleo and Whole 30 approved.

Let’s Talk Wraps…Gluten and Grain Free are Both Options!

So when it comes to what to wrap all this goodness in, you have lot’s of options! Traditional tortillas work great, but so do spinach and sun dried tomato tortillas. And if you live gluten or grain free many stores now sell fantastic gluten and grain free choices. They can usually be found in the refrigerated section right by the fresh tortillas!

The Recipe: Five Minute Veggie Wrap!

Variations and helpful hints and what you will need: for this recipe you can use any ranch dressing you wish or make your own with Naturally Free Real Food Ranch Seasoning. Add rotisserie chicken, your favorite lunch meat, or bacon if you wish! To see last week’s five minute wrap, click! After dicing tomatoes set them on a paper towel while you dice cucumbers. This will allow  extra juices to be absorbed so your wrap won’t get soggy.

Ingredients
  • 1 tortilla
  • 1/2 a small tomato, diced
  • handful baby spinach
  • 1 diced Persian cucumber, these are small and the skin and be left on
  • 1/2 a ripe avocado, sliced
  • a small bunch of sprouts
  • desired amount of ranch dressing
Instructions
  1. Dice tomato and set on a paper towel to soak up extra juice.
  2. Place spinach on a tortilla.
  3. Top with cucumbers, avocado, sprouts and tomatoes.
  4. Drizzle with ranch dressing.
  5. For dressing: Place all ingredients in a small bowl and whisk till smooth.
