Hello! This is the last installment (for now)  of our collaboration with the fabulous fashion and style blog The Working Girl Inc., to bring you easy five minute lunch ideas. We know you have more important things to spend your time and energy on than lunch, but you also want a healthy option that gives you energy to get through the day! A wrap is the answer…and the best part is no recipe needed!

This is the Hummus Turkey Wrap!

Turkey Hummus Wrap~ Five Minute Lunch!

As always start with your favorite tortilla, wrap or flatbread. Top with your favorite large leaf lettuce. I used butter leaf here. The lettuce (or spinach, or kale etc…) creates a barrier to keep your wrap from getting soggy. Add hummus (your favorite flavor), rolled turkey slices (I used Applegate Farms), diced red bell pepper and avocado slices. That’s it!

Fold the top and bottom first…

…and then fold in from the sides…

…wrap in parchment paper and when you are ready to eat slice it in half! Looks delicious right? The best part is it will fill you up, get you through the day and you won’t have the guilt from ‘super-sizing’ it at a local fast food joint!

If you are like me and prefer to make your own hummus instead of using store bought please see my recipe here. Homemade is always better. You can make it ahead of time and keep it in the fridge for 5 days.

If you want to make this wrap grain free, simply follow the same instructions but use your large leaf lettuce as the wrap instead of a tortilla! To see my previous Five Minute Lunch Wraps click here and here.

I have certainly enjoyed collaborating with The Working Girl Inc., on these five minute lunch ideas! Be sure to give the The Working Girl blog a look! They have a darling tulle skirt post coming up!
