Hello! This is the last installment (for now) of our collaboration with the fabulous fashion and style blog The Working Girl Inc., to bring you easy five minute lunch ideas. We know you have more important things to spend your time and energy on than lunch, but you also want a healthy option that gives you energy to get through the day. A Hummus Turkey Wrap is the answer!
How To Make The Hummus Turkey Wrap!
As always I start with my favorite tortilla, wrap or flatbread. Top with large leaf lettuce. I used butter leaf here. The lettuce (or spinach, or kale etc…) creates a barrier to keep your wrap from getting soggy. Add hummus, rolled turkey slices (I used Applegate Farms), diced red bell pepper and avocado slices. That’s it! You can find all different flavors of delicious hummus at the store, BUT if you want to make your own try my recipe for homemade hummus here!
How to Fold It:
Fold the top and bottom first…
…and then fold in from the sides, …wrap in parchment paper and when you are ready to eat slice it in half! Looks delicious right? The best part is it will fill you up, get you through the day and you won’t have the guilt from ‘super-sizing’ it at a local fast food joint!
LET’S TALK WRAPS…GLUTEN AND GRAIN FREE ARE BOTH OPTIONS!
So when it comes to what to wrap all this goodness in, you have lot’s of options! Traditional tortillas work great, but so do spinach and sun dried tomato tortillas. And if you live gluten or grain free many stores now sell fantastic gluten and grain free choices. They can usually be found in the refrigerated section right by the fresh tortillas!

The Recipe: It’s a Wrap! The Hummus Turkey Wrap
What you need: If you are like me and prefer to make your own hummus instead of using store bought please see my recipe here. Homemade is always better. You can make it ahead of time and keep it in the fridge for 5 days.
- 1 tortilla, wrap, or flatbread of your choice (se gluten and grain free options above
- 2 fresh lettuce leaves
- 3 tablespoons hummus, store bought or homemade
- 2 tablespoons diced red pepper
- 6 slices turkey lunch meat

Lay tortilla on flat surface. Layer with lettuce, then hummus, then turkey and bell pepper. Fold and eat!

Lately I have just been using spinach tortillas. But sometimes I use cassava flour tortillas. As long as it’s soft enough. I am happy 🙂
