Carrots a ‘root vegetable’ and they aren’t just pretty and delicious, they are also very nutrient-dense, low-calorie and contain fiber. One medium-sized raw carrot (about 61 grams) contains roughly 25 calories. 6 grams of carbohydrates, 1.5 grams of fiber and 0.5 grams of protein. They are particularly rich in beta-carotene (which the body converts to vitamin A), vitamin K, and potassium. Carrots are super versatile, I love them raw, roasted, puréed, and even grated and baked in a cake!
