I have to say these days I will throw an egg on just about anything; pastas, salads, veggies, burgers, even soups! They add beauty and flavor to almost any dish.

The Redemption of The Egg!
Yes, after 40 years of vilifying eggs the government finally decided to announce that cholesterol is no longer ‘a nutrient of concern’. And with that announcement they encouraged people to eat eggs (and butter). It only took them forty years to catch up with what real food enthusiasts already knew: eggs are good for you. Eggs are high in protein, healthy fats and let’s face it, they look pretty darn good on everything.
If You Like It Then You Better Put an Egg on It… a Pastured Egg Please
I always recommend using ‘pastured’ eggs. Pastured hen’s diets are naturally enhanced with bugs, earthworms and other little creatures which give their eggs a big nutrient boost. Eggs from pastured hens contain up to 20 times more healthy omega-3 fatty acids than grain fed factory hens. Pastured eggs also have 40 percent more vitamin A and much brighter orange yolk!
Pastured hens are usually much healthier and happier than their space-restricted and antibiotic-pumped industrial cousins. Pasturing is the traditional method of raising egg-laying hens and other poultry. It is ecologically sustainable, humane, and produces the tastiest, most nutritious eggs.
So here are my top picks for recipes to put an egg on…
