Vegetables. They can be a problem for some people. We all know we are supposed to eat them everyday, in fairly large portions, but let’s face it, kids don’t always love them, and even adults struggle to get in as many servings as they should. The key to success is making veggies delicious. If they are delicious, people, even kids, will eat them! Today I am sharing Twelve Delicious Vegetable Side Dishes, they are family friendly favorites. Each recipe is easy to make, delicious, requires no unusual ingredients or special skills. Just simple, delicious, clean recipes. Enjoy!

If you are trying to keep it low carb, honestly, zoodles are a life saver. But plain zoodles can be…well…plain. These Almond Pesto Zucchini Noodles on the other hand are anything but plain. In fact they are loaded with flavor as well is protein and healthy fats!

This Steamed Broccoli with Cheese Sauce is one of my all time favorite ways to serve broccoli. My kids always loved it too.

It’s no secret I love salads. Most (but not all) of my salad recipes contain some sort of greens. But I have to say, I do love a unique side salad made without lettuce… for example, this Tomato Avocado Salad (Whole30). It’s really simple, tastes great with any protein, and is especially good when served with Mexican food.

If you think you aren’t a fan of Brussels Sprouts, I bet I can change your mind with this recipe. These are “Roasted Brussels Sprouts with Apples and Hazelnuts”. Caramelized Brussels sprouts, sweet shallots, warm tangy apples and toasted hazelnuts are a heavenly combination!

If you are a fan of mashed potatoes, you are going to love this Three Ingredient Puréed Cauliflower recipe! Buttery, light and has the taste and texture of mashed potatoes without all the carbs.

Easy Roasted Baby Carrots are one of my favorite side dishes. They are simple, beautiful, and taste great with beef, chicken or fish. They also happen to be really, really pretty.

Our favorite way to dress up cauliflower is with a creamy sharp cheddar cheese sauce. This sauce takes ordinary steamed cauliflower and turns it into comfort food. This is The Organic Kitchen’s Cauliflower “Mac” and Cheese, and I know you are going to love it!

These Zucchini Fritters with Lemon Ricotta (with Gluten and Grain Free Option) are a great way to use the over abundance of zucchini from your summer garden!

I love Carrots. And with the holidays coming up quickly, who couldn’t use a good carrot dish? These Sautéed Carrots Three Ways: Simple or Dressed for The Holidays offer you the option choose the healthiest versions or get a little decadent for the holidays.

It is recommended that we eat about six cups of vegetables a day. But most of us don’t even come close! The only way I can achieve that ideal is if I add vegetables to my breakfast, which is where this Breakfast Hash with Poached Eggs comes in clutch.

Ok…I can count I promise, but I decided that minutes to throw in an extra! Grandma Julia’s Green Beans with basil, tomatoes and pine nuts!

Well that’s it folks! Thanks for stopping by and I hope you enjoy these Twelve Delicious Vegetable Side Dishes!
