Why Sweet Potatoes?
Sweet potatoes are making a comeback and I couldn’t be happier about it. They are high in vitamins B6, E and C, potassium and iron and a great source of fiber especially when eaten with the skin on…and who wouldn’t want to eat the skin? Especially when making it crispy with a generous sprinkling with sea salt and pepper?

Your mouth is about to be so happy because these sweet potatoes are slathered in olive oil, rubbed with sea salt and pepper, baked to crispy perfection, and then topped in mixture of creme fraiche ( French sour cream), tabasco, lime, Serrano chili, and maple!
What’s The Difference Between a Sweet Potato and a Yam?
Sweet potatoes cause some confusion at the super market and not just amongst the customers. I have had produce department employees tell me sweet potatoes and yams are the same thing. They are completely different species of plant. They have also told me sweet potatoes are white and yams are orange, again, incorrect as sweet potatoes and yams can be orange, purple or white. Here’s the deal, yams are grown in Africa very rarely sold in the US so no matter what the color or what the supermarket sign says, you are getting a sweet potato. The Recipe: Baked Sweet Potatoes with Spicy Maple Cream Fraiche

I am all about these Baked Sweet Potatoes with Spicy Maple Creme Fraiche! Give me all that sweet potato goodness smothered in more sweet, spicy, salty, savory goodness please.
- 4 small-med sweet potatoes
- Butter ( or olive oil or ghee to rub on skin)
- Sea salt
- Pepper
- 1/2 cup creme fraiche, or sour cream or plain greek yogurt
- 1 teaspoon freshly squeezed lime juice
- 1 Tablespoon maple syrup
- 1 teaspoon serrano chili minced finely
- 1/2-1 teaspoon tabasco sauce
- Small pinch sea salt
- 1/4 tsp freshly ground pepper

Preheat oven to 450, place rack in center position and place a piece of foil in the bottom of the oven to catch drips

Rub potatoes lightly (or your oven will smoke) with butter, olive oil or ghee and sprinkle generously with sea salt and pepper. Place directly onto oven rack and bake for 40-45 minutes (or until a fork goes in easily).

Remove when ready, slice open and top with sauce and serve.

Stir all ingredients until well mixed. (see link above to learn to chop a Serrano chili)
