We just got back from Europe. Our daughter got married in Paris so we decided to visit the Amalfi Coast of Italy as well. While there we enjoyed plenty of sun, sea and fabulous meals like this Peach, Berry, Burrata and Prosciutto Salad!

The Amalfi Coast…Land of Beautiful Beaches, Amazing Food and Fun!
I think I was meant to be Italian. The whole Italy vibe is my jam. The weather, the beaches, the language, the pasta and salads, I love it all!
We took two boat excursions along the coast to see the sights… (Sorrento above and Positano below)
…view castles and caves…
…and play in the water to our heart’s content. (That’s me taking the plunge with the bride to be). See the second installment of our trip from the Island of Capri here <—!
After a Hard Day of Play…
…we came back to our Air BNB hungry and ready to eat but didn’t want to make anything time consuming or extravagant, so several nights we opted for a version of a salad like this: greens, creamy burrata, seasonal fruits, nuts and salty prosciutto tossed in lemon vinaigrette and drizzled with a quality balsamic glaze..
